This might sounds like a great thing, but consider aquifers. In a mountain, you can easily settle your base on top / top level of an aquifer, and avoid having to build a dranage system. WebOn Flat Terrain it easier to design an aboveground area if you going for that type of fortress. You can also collect more wild plant life, easier to set up windmill, and easily setting up green floors (Channel to make bottom level aboveground). Into Mountains, as you say is more defensible.
